A Few Things To Share & Sweet Potato Casserole

Hey my friends! Just wanted to share a yummy recipe with you that I came across today. I haven't tried it yet, but I am looking forward to doing so. I am getting in the mood for fall, which means lots of pumpkin recipes! Stay tuned for those! Most of the recipes I will be sharing with you guys will most likely be gluten free and paleo.

I also wanted to share some pictures I took yesterday when I stopped at my secret garden spot to see what was blooming. Enjoy my friends!

Okay, who doesn't love sweet potato casserole??? It's one of my favorite dishes, especially for Thanksgiving or Christmas. I found this paleo version over at Cupcakes OMG. It looks like she has some really good recipes on her web site. I will definitely be going back to try some of them out. I'll be sure to pass them along to you. Let me know if any of you try this recipe and how you like it.

Sweet Potato Casserole

  • 4 large sweet potatoes
  • 1/2 cup canned coconut milk
  • 1 Tbsp. coconut oil
  • 1-2 Tbsp. maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • juice of half an orange
Pecan topping
  • 3/4 cup chopped raw pecans
  • 1 tsp cinnamon
  • 1 Tbsp maple syrup
  • 1 tsp melted coconut oil
1. Bring a large pot of water to a boil and preheat oven to 350 degrees F. While water comes to a boil, peel and dice sweet potatoes into large chunks.
2. Add sweet potato chunks to water. Boil until fork tender--about 10 minutes.
3. Drain potatoes, then dump them back in the large pot with all the other ingredients. Using a hand mixer, blend until potatoes reach desired consistency and flavor. (You may like to add a little more coconut milk, spices, or syrup based on your taste.)
4. In a small bowl, combine all topping ingredients until pecans are well coated.
5. Dump sweet potatoes into an oven safe dish and top with pecans.
6. Bake in preheated oven until topping is browned--about 15 minutes. Serve warm.

I have used them to order lots of books over the years, including lots of my homeschooling curriculum. They have great prices and they are very quick to ship your items out. Ain't Nobody Got Time For That!



Hey my bloggy friends! I'm back! I hope you didn't give up on me. I haven't really had the time or the energy to get anything new posted for a while now. Plus, I really haven't been in a very good frame of mind to share anything worth reading. It would have been all doom and gloom, pissed off at the world kinda stuff. So you can thank me for sparing you that kind of thing. Haha! 

I've been trying to sort through lots of painful thoughts and feelings these last few months. Wait, scratch that, it's been more like these last four years that this "sorting through" thing has been going on.  I've had some pretty good days, not so good days, and really bad days, as far as trying to work through all the physical and emotional challenges I've been walking through. The death of my brother three months ago really threw me for a loop. It seemed to stir up an emotional hornets nest. It brought up so many painful feelings from the past, which had nothing to do with my brother, that I thought I had already dealt with, but obviously hadn't fully processed the pain from those things. On top of having the grief to deal with, I've been trying to deal with all these crappy emotions from the past. Whoa! Where did that come from???

Have you ever had a season where it seems like you constantly have difficult, painful, heartbreaking things happen, over and over? Did it seem like it would never stop? Did you feel like you were going to collapse under the weight of it all? Did you get to the point of just wanting to give up? That is exactly how the last four to five years have been for me, but even more so since my brother passed away. I keep wondering when it will finally be over. I am so ready for a new season to begin. I don't even know who I am anymore. I'm not the same person I used to be. The pain and heartbreak have changed who I once was. I don't know what my purpose is anymore. Did I even have one to start with? I don't know what I believe anymore. Does God even care about me at all? Why does it feel like He has completely left me? Are His promises true for me or am I too far gone? These are the sort of things I have been struggling with for quite some time. Talk about feeling like you're brain and emotions are on overload! Gee whiz! I want to get off this ride now!

I finally realized that I was not able to handle all the emotions I was going through in a healthy way because I was physically exhausted. I had pushed myself beyond what I could deal with. I've learned the hard way how important it is to take care of myself and to make time for me, which means it's okay for me to say NO. I've had to face the fact that I am not Superwoman. I cannot be everything to everyone. I cannot rescue or help everyone. I cannot, nor do I have to, always be there to do whatever someone else wants me to do. I have wants and needs that are just as important as other peoples wants and needs. These have not been easy lessons for me to learn. I can sometimes be a little hard-headed.....okay, maybe a lot hard-headed when it comes to things like changing old habits and ways of thinking. No one likes to admit they can't do something. No one wants to admit they need help from others. No one wants to have to deal with the guilt trips you get from yourself, and sometimes others, when you choose to say no. As a recovering people-pleaser, telling people no, especially family, means you have to deal with this huge guilt trip from yourself, and sometimes from the person you are telling no to. It is no fun at all!

I can tell you, from personal experience, if you don't take notice and do something about those red flags that are waving at you, your body and your emotions will start breaking down. Our bodies and minds are not meant to constantly be overburdened and stretched beyond what we can handle in a healthy way. All this can leave us stressed out, exhausted, and even depressed. Our bodies were created to have rest. We need to take off the Superwoman/Superman cape. We all have our limits, and that's okay. One person may be able to bear more than another, so don't compare yourself to someone else. This is not about someone else, this is all about you. It's all about knowing what you can handle and what you can't, and being okay with admitting you cannot do it all. It's about recognizing the warning signs that are telling you that you are pushing yourself beyond your limits. It's about making some positive changes for yourself. You are worth it. You have to actively pursue those changes because they will not happen on their own. If you don't make time for yourself, no one else will. It's not going to just happen without making the effort. You cannot give to your family or to the people you love, out of a grateful heart, if you are so worn out and exhausted. To continue trying to give more of yourself than there is to give only results in bitterness and anger.

There are some things I can't change about my life, but there are also things I can change, and one of those things is what I do with my time and energy. I am responsible for how I use my time. God gives us all 24 hours every day, so what am I going to do with it? Am I going to continue to live my life feeling like I am pushed beyond what I can physically and emotionally handle, or am I going to stop and take inventory of the things I give my time and energy to? Am I going to make the necessary changes to get my life and my health back in order? Just because we're busy does not mean we're fruitful. Overextending yourself is not going to produce good fruit.

I want to share a suggestion with you that was inspired by a dear friend of mine recently. It made me realize that I'm the only one who can do something to change the things I choose to spend my time doing. It made me realize that no one else is in charge of the way I spend my time, but me.

So, here's what I want you to do:

1.  Sit down somewhere quiet for a few minutes. Grab a cup of coffee or tea, a pen and a piece of paper. (Yes, that means you have to stop everything for a few minutes and sit down. You can do it! The _____ (fill in the blank) will still be there when you get done.)

2.  Think about all the things you do every day, all the things you give your time and energy towards. 

3.  Make a list of those things. For some of you it may be a very long list, but do it anyway. You may be surprised once you see everything you put your time and effort towards.

4.  Decide what's important on that list. Decide what you want to commit your time and energy to. Every time you say yes to something, you're saying no to something else. Are there things or activities that you really don't have to be committed to? Remember, you don't have to be committed to everything. What are the things on that list that need to be priorities and what are the things that are just taking up your precious time? Are there things on that list that you do because you're afraid to tell someone no? Are you only doing it because you're a people-pleaser? (Oh my friend, I so understand the pressure of that one. It's hard to say no, but it's even harder when you get so physically and emotionally spent that you no longer have anything to give and your body is starting to rebel because it can't take anymore.) Side note: There may be things on that list that you need to be committed to for a certain season. That's okay. I have some of those on my list too. It won't be that way forever.

It's not easy to make changes, but when you've come to a fork in the road where you know you can't keep going the same old way anymore because you are suffering physically and emotionally, it gives you a little more motivation. We are only hurting ourselves when we keep trying to do more than we are capable of. Don't ignore the red flags. You can make the needed changes to help bring more peace to your life, to have a little more time to focus on yourself, but it will require being persistent and determined. Rest is beneficial to our minds, bodies, and our souls. Best wishes to you my friends, as you sort through the things that take up your time. Life is too short to waste our precious time on things that aren't bearing fruit. Ain't nobody got time for that!

How Many Times Can a Heart Be Broken?



In honor of my little brother, who passed away on May 14, 2013. He was forty-four years old. You are dearly loved and greatly missed, little brother. 

Hey there my bloggy friends. I didn't forget about you. I have been going through so much junk lately that I was beginning to wonder if I was ever going to get my head above water again. I have felt like I was drowning in heartache and pain lately. My brother passed away suddenly a little over a month ago and that has been very difficult for me. I still feel like I'm frozen in time. I feel like time just stopped the day he died. I still cannot believe he's really gone. I look back at pictures of us when we were kids and wonder when I'm going to wake up from this nightmare and see him again. I think what hurts the most is I didn't get the chance to tell him how much I loved him before he died. I thought I would be seeing him the next day, but that didn't happen. It's also hard not knowing what happened to cause his death. All we know is that he stopped breathing and didn't respond to efforts to resuscitate him.

He suffered so much in this life. He had a mental illness, which stole so much from him. I choose to remember him before he had all those struggles with that illness. He was carefree and liked to make people laugh. He was always joking around. He loved sports and played many of them when he was a kid. He was a darn good baseball and basketball player, and he could throw a mean bowling ball. I remember when he broke his nose while he was playing basketball when he was younger. I think I cried more than he did because I knew he was in so much pain. He got quite a few injuries from all those adventures.

I have my memories to hold onto, but they can never replace having him here. I still cry almost everyday because I miss him so much. It's been really hard on my mom because she and my brother were together everyday. He lived with her and she took care of him, so this has been a huge change for her. I cannot imagine the pain she is going through with losing a child. No matter how old our children get, they are still our babies and that never changes.

Sometimes I wonder how many times our hearts can be broken. It seems mine has been broken many times over the last few years. Hopefully, God will take all the broken pieces and make something beautiful and valuable from it.

"In fifteenth century Japan, a shogun damaged a precious Chinese bowl, causing cracks to splinter across the small vessel. Fearful of the cracks growing, the shogun took the bowl to a craftsman and asked him to repair it in such a way that it would become more valuable than before. The craftsman filled the cracks with lacquer resin sprinkled with powdered gold. Called kintsugi, “golden joinery” in English translation, the technique became highly desired, and it wasn’t long before cracked and repaired pottery was more valuable than pristine vessels."

That gives me hope that out of all the pain I've been walking through, there will be something beautiful that arises from these ashes. Hopefully, God will repair what's been broken with something to make it even more beautiful and valuable than it was before.

None of us are promised tomorrow, or the next moment for that matter. If you have people in your life that you love and who mean the world to you, please tell them now, while you still have the chance. If there have been harsh words or hurt feelings between you and someone you love, try to make things right and don't focus so much on who's right or wrong. We are only given this very moment we live in and after it's gone, well, there's no getting it back.

I wish a thousand times I had just one more moment with my brother, so I could tell him how much I love him. I tell him every day now, and I hope he can hear me, but it's just not the same thing. I know one day this ache in my heart will lessen and I will finally be able to think about him without crying, but until that time, I will just take one moment at a time. The comfort I try to hold on to is in knowing that he is finally free of that mental illness and he is finally at peace, and I will see him again one day. Rest in peace little brother. Rest in peace.

Welcome back my friends! I hope you had a great Christmas. Christmas Day here was very busy, but also very blessed. We got to go visit with some family we haven't seen in a while. One of the greatest blessings for me is being with family, especially at Christmas time.

Happy New Year to you! I hope you will be greatly blessed throughout this coming year, and that it will be filled with love, laughter, and joy. I don't know about you, but I usually try to take some time to sit back and reflect over the year towards the end of December. I try to look at areas where I think the Lord is speaking to me about making certain changes, or areas where He is showing me I need to grow in. There have been many times where He has shown me areas where I need to let go of certain things or certain people. This year is no different.

This morning, as I was doing my devotions, I was reflecting back over this past year and all the challenges that came with it. (There were many.) I just started a new devotional book this morning called, Jesus Calling by Sarah Young. The reading for today really jumped off the page at me. There were two sentences that grabbed hold of me during my time of reflection. "Do not cling to old ways as you step into a new year. Instead, seek My face with an open mind, knowing that your journey with Me involves being transformed by the renewing of your mind." God spoke so clearly to me through these words, as well as through the Scripture verses that went along with the devotional for today. (I will include those at the end of my post today for you to read.)

Here is what I believe God was showing me this morning......many of the frustrations and stresses I have been bogged down and burdened by this past year have been because I have been trying to do what only He can do. I have gotten so caught up in trying to change people's minds and hearts in my own strength, and my own way, that it has caused me a tremendous amount of stress and frustration.  You know those times where you are trying so hard to get someone to see something that is very clear to you, but it seems no matter how hard you try or how many times you try, you just can't get them to see it? Well, that's where I've been the majority of the time this last year.

God has seen my frustration with certain situations and He has seen how negatively it has been affecting me, especially physically and emotionally, so I know this was Him telling me that I needed to change the way I think about these things and to release them to Him. I needed to leave these old ways of thinking at His feet and move forward in a new direction.

It grieves His heart when His children are so burdened down with things we weren't meant to carry in the first place. We cannot change any one's mind, or heart, about something that they are blind to. Their blindness may be something they are choosing, or it could be coming from something the enemy is using against them. Either way, only God can remove the scales from their eyes. Only God can change their heart and mind in situations like this. My frustration was coming from trying to do His job, which only resulted in wearing me out and leaving me angry and frustrated.

This past year was certainly filled with many challenges and many painful situations, but it was also filled with many joyful moments that have helped carry us through the hard times. There were also many valuable lessons learned, even though they came through much adversity, but then again, isn't that the way most valuable lessons come? Adversity gives us some of the greatest lessons we will ever learn. "Sometimes adversity is what you need to face in order to become successful." ~Zig Ziglar

Please remember, if you're in a situation where you feel like you're hitting a brick wall over and over, trying to get someone to see something that's perfectly clear to you, it may not be your job to show them. Give the situation over to God and let Him do what only He can do. It's much less stressful and frustrating that way. Until next time my friends, be blessed!

Merry Christmas Blog #1

Merry Christmas to you my friends! I absolutely love this time of year! I think I would love it more if we had a little snow, but hey, I'll enjoy the 70 degree temperatures over the next few days anyway. 


Today I wanted to share this snowman picture I made over at picmonkey.com. I love using their tools for photos. I will leave a link at the bottom of the post for you so you can check them out.
 
I also wanted to share a passage of Scripture about the announcement the angel, Gabriel, had for Mary.




In the sixth month of Elizabeth’s pregnancy, God sent the angel Gabriel to the Galilean village of Nazareth to a virgin engaged to be married to a man descended from David. His name was Joseph, and the virgin’s name, Mary. Upon entering, Gabriel greeted her:

Good morning!
You’re beautiful with God’s beauty,
Beautiful inside and out!
God be with you.

She was thoroughly shaken, wondering what was behind a greeting like that. But the angel assured her, “Mary, you have nothing to fear. God has a surprise for you: You will become pregnant and give birth to a son and call his name Jesus.

He will be great,
be called ‘Son of the Highest.’
The Lord God will give him
the throne of his father David;
He will rule Jacob’s house forever—
no end, ever, to his kingdom.”

Mary said to the angel, “But how? I’ve never slept with a man.”

The angel answered,

"The Holy Spirit will come upon you, the power of the Highest hover over you;
Therefore, the child you bring to birth will be called Holy, Son of God."

"And did you know that your cousin Elizabeth conceived a son, old as she is? Everyone called her barren, and here she is six months pregnant! Nothing, you see, is impossible with God."

And Mary said,

"Yes, I see it all now; I’m the Lord’s maid, ready to serve. Let it be with me just as you say."

30 Days of Thanks- Day 30: Focusing

Well my friends, it's Day 30 of my 30 Days of Thanks, and today I am thankful for several things:

I am thankful to all of you, my bloggy friends, for taking the time over these last thirty days to read my posts. Even though I won't be posting every day, as I have over the last month, I will be posting on what I hope is a regular basis. I'm kinda playing around with some ideas for my blog for the month of December. We'll see how all that works out.

I am thankful that I got to spend the day with a very dear friend of mine, who I don't get to see nearly enough. We even got to watch my all time favorite movie, Pride and Prejudice. This was the first time she had seen it, so it was fun getting to watch it with her. 

I am thankful for the delicious soup that my daughter, Brittany, had ready for me when I got home tonight. Taylor and I were gone for about nine hours today, including driving time, so by the time I got home, I was wiped out. That soup was so yummy and it really hit the spot.

I am also thankful that this month has been a great way to reflect on all the things I am thankful for.  It's way too easy to fall into the trap of seeing all the things that are wrong in our lives. It takes a little more effort to focus on the things that are good in the midst of all the craziness.

30 Days of Thanks- Day 29: God Doesn't Give Up On Me

Good Thursday to you friends! I hope your week has been a good one. Well, it's Day 29 of my 30 Days of Thanks. Today I am thankful that God doesn't give up on me, even when I feel like giving up on Him.
 
These last three, almost four years, have been filled with some of the most difficult and painful things I have ever walked through. I have felt beat down to the point of wanting to just give up on everyone and everything, including God. I have cried out over and over for God's help, and have heard only silence in reply. There have been times when I have felt like I was going to break into too many pieces to put back together. My heart has felt like it could not take one more crushing blow, and yet more hurt came. My faith felt like it was being ripped apart. There were times where I seriously wondered if I would be able to withstand the trials and come out on the other side with my faith intact.

Thankfully, I'm here to say that I'm still standing. It may not be very tall, or very strong, but I'm still here. I am still taking one step at a time, one day at a time. Some days it feels more like I'm crawling instead of walking, but you know what, that's okay too. God is there cheering me on to continue the race. He is telling me that greater things are up ahead. He is urging me not to give up. He is our biggest cheerleader. He already knows the great things He has planned for us, if we just don't quit.

If you are like me and have been through a season of being pushed beyond what you think you can handle, I want you to know that God is there, even though it may not feel like it. He will see you through. He has not, nor will He ever, give up on you. He has a plan for everything we go through, even when we have no clue what in the world is happening. I still don't know what some of those plans are, but I am trying to trust that He will work them out for my good, somehow, someway.
